Goya Chanpuru

goya chanpuru Goya is a bitter gourd which has bumpy and dark-green skin. The bitterness can enhance the appetite in summer, and goya is often cooked during this time of the year in Japan. Chanpuru are stir-fried dishes which are regional specialities in Okinawa. When making chanpuru with goya, adding eggs helps to soften the bitterness.
