Miso Flavored Stir-fried Eggplant

Stir-fried eggplants are simply seasoned with miso paste, sugar, and mirin. Adding some sweetness enhances the flavor of miso and goes with eggplants. If you like miso, I think you enjoy this dish. It's good to put on top of steamed rice and eat together. I often cook this dish for Japanese-style breakfast.
