Japanese Vegetable Stew Recipe Wanted

A member of Japanese Food Forum wants to know how to make Japanese-style vegetable stew and writes, "I spent the spring of 2005 in Tokyo, and every morning my Shinjuku-area hotel served a wonderful, hearty root-vegetable stew for breakfast. Carrots, sweet potatoes, burdock root and some other root vegetable I couldn't identify were combined in a light, rich broth. Along with beautiful fresh fish, rice and pickles, breakfast was my favorite Japanese meal..." Any Recipes?
