Japanese Recipe of the Week: Kinpira Renkon

kinpira renkon Renkon is lotus root which has lots of holes. Renkon's holes symbolize a good future and is thought to be a good luck food in Japan. Renkon is rich in vitamin C and is commonly used in Japanese cooking. Braised renkon is called kinpira renkon.
