Takenoko - Japan's Spring Delicacy

takenoko rice (c) Setsuko Yoshizuka Takenoko are shoots of bamboo. They are harvested around March to May and are a great spring delicacy in Japan. I like the crunchy texture of takenoko, and takenoko rice is my favorite dish. Enjoy a taste of spring with takenoko.
