Kata-yakisoba Kata yakisoba is a kind of yakisoba where crunchy noodles are served with ankake (thick sauce). As kata means hard in Japanese, pre-steamed yakisoba noodles are deep-fried until crunchy. Top noodles with thick sauce just before eating.
