Nuta are traditional vinegared dishes seasoned with miso based sour sauce. The sauce is called sumiso (vinegar and miso). I like sweet sumiso, but it's good to add some karashi mustard in sumiso if you would like. Nuta dishes can be made with various vegetables, and negi is often used. Boiled negi adds a nice slimy texture to this dish. It's a simple and refreshing side dish.
