Curry with Fried Vegetables

I like to top curry with pan-fried vegetables, especially during the hot season. They add some nice texture and colors. It's an easy dish to make, using pre-packaged Japanese curry roux. You can make it mild or hot, depending on the roux you purchase. I choose eggplants and bell peppers for the topping, but it's good to add your favorite vegetables or mushrooms.
