Simmered Sweet Kintoki Beans

Simmered Sweet Kintoki Beans

Beans are often simmered with sugar in Japanese cooking like anko. Kintoki beans are red beans and are similar to kidney beans.
Japanese Beans

Ingredients:

  • 3/4 lb kintokimame (kintoki beans), rinsed and drained
  • 1 2/3 cup sugar
  • salt

Preparation:

Put about 8 cups of water in a deep pot. Soak kintoki beans in the water overnight. Put the pot on high heat and bring to a boil. Turn down the heat to medium and simmer for 5 minutes. Drain the beans in a colander. Put 5 cups of water and the boiled kintoki beans back in the deep pot. When water boils, turn down the heat to low and simmer beans for about 30 minutes, or until softened. Add half of the sugar in the pot and put a drop lid on the beans and cover with lid. Simmer for about 10 minutes. Add the rest of the sugar and a pinch of salt to the beans and simmer for 10 more minutes. Stop the heat. Let the beans cool in the pot.
