Simmered Sweet Kintoki Beans

Beans are often simmered with sugar in Japanese cooking.

Ingredients:

  • 1 lb kintoki-mame beans, rinsed and drained
  • 2 - 2 1/2 cup sugar (adjust the amount to your taste)
  • salt

Preparation:

Put about 6 cups of water in a deep pot. Soak beans in the water overnight. Put the pot on high heat and bring to a boil. Turn down the heat to medium and simmer for a few minutes. Drain the beans in a colander. Put the boiled beans back in the deep pot and pour about 5 cups of water. Bring to a boil on high heat. Turn down the heat to low and simmer beans for about 1 hour, or until softened, adding water if necessary. Add sugar and a pinch of salt and put a drop lid on the beans and cover with a lid. Simmer for about 10 minutes.
