Tsukune are round or oval-shaped or long meat balls made by kneading ground meat with other ingredients. Tsukune can be fried, simmered, or grilled. Oval-shaped chicken meat balls are fried in this tsukune recipe.

Ingredients:

  • 1 lb ground chicken
  • 1 egg yolk
  • 1/2 tsp salt
  • 1 1/2 tbsp soy sauce
  • 1 tsp fresh ginger juice
  • 2 tbsps katakuriko / corn starch
  • 2 tsps vegetable oil for frying

Preparation:

Put ground chicken in a bowl. Add egg yolk, salt, soy sauce, and fresh ginger juice in the meat. Mix well. Add katakuriko/corn starch in the meat and mix well. Divide the meat into 12 blocks. Make oval-shaped meat balls. Heat vegetable oil in a frying pan. Fry meat balls on medium heat for 2-3 minutes. Turn them over and put a lid on the pan. Fry the meat for 4-5 minutes on low heat. Remove fried tsukune from the pan and drain oil on paper towels. Serve the tsukune with soy sauce or karashi mustard.
