Before You a Rice Cooker

By Setsuko Yoshizuka, About.com

Do you cook Japanese rice often? I'll give you some information you might want to know before you buy a rice cooker.

About Japanese Rice

Japanese rice is short grain rice and is used for daily cooking in Japan. Japanese rice gets sticky when it is cooked. The long-grained American rice isn't proper for Japanese cooking, because it is drier and doesn't stick together well. Rice is cultivated all over in Japan. Kokuho Rose and Nishiki brands are well known, and you can get that Japanese-style rice at grocery stores in the US.

Japanese Rice Cooking Tips

  • Make sure to wash rice well before cooking.
  • Let washed rice soak in water at least 30 min.
  • Let cooked rice steam before you open the lid.
  • Size of Rice Cookers

The capacity of rice cookers is described in cups of uncooked rice. When you buy a rice cooker by Japanese manufactures, the capacity is indicated in "gou" (traditional Japanese measuring unit). Each rice cooker usually comes with a measuring cup which holds one gou which is 180ml. One gou of uncooked rice yields to about 450cc of steamed rice. It's said that a 5.5-gou capacity rice cooker is suitable for a household of 3 to 5 people.

    Features of Electric Rice Cookers

  • Choose one with a non-stick inner pan.
  • Measuring lines in the inner pan would is helpful.
  • Clear glass lid isn't necessary. Plastic lid is preferable because it's light and safe.
  • If a rice cooker has an inner lid, make sure it's easy to remove for cleaning.
  • Keep warm setting is useful if you and your family eat rice a couple times a day.
  • Timer is a helpful feature to have.
