It's a recipe to make seafood curry with pre-packaged Japanese curry roux. Various seafood add good flavors in the soup.
Ingredients:
- 1 squid, gutted and cleaned
- 8 shrimps, peeled and deveined
- 8 scallops
- 1 onion, chopped
- 1 inch ginger, finely chopped
- 1 clove garlic, finely chopped
- 3 cups water
- 1/4 lb Japanese curry roux (*adjust the thickness of curry to your preference by changing the amount of curry roux)
- salt and pepper
Preparation:
Slice squid into 1/4-inch wide rings. Heat some oil in a deep pot and saute garlic, ginger, and onion on medium heat until onion is softened. Season with salt and pepper. Add water in the pan and bring to a boil. Simmer on low heat for a few minutes. Add squid, shrimp, and scallops and simmer for about 5 minutes or until cooked through. Add curry roux and lightly stir. Simmer for about 5 minutes.
