Sekihan is Japanese red rice cooked with azuki beans. It's a traditional Japanese dish for celebrations.
Ingredients:
- 2 1/4 cup mochigome (glutinous rice)
- 2 oz azuki red beans
- 1/2 tsp salt
- gomashio (black sesame seeds and salt) for topping *optional
Preparation:
Wash rice and drain in a colandar.
Put azuki beans in a medium pot and pour lots of water to cover the beans.
Boil for a few minutes on high heat and drain.
Put azuki beans back in the pot and pour lots of water to cover the beans, and simmer on medium-low heat for about 15 minutes, or until almost softened.
Drain azuki beans and keep the colored liquid.
Mix some water and the colored water to make 2 1/4 cup of liquid.
Place washed rice in a rice cooker. Pour the colored water over the rice. Season with salt and mix well. Place boiled azuki beans on top. Start the rice cooker. When rice is cooked, let it steam for about 15 minutes. Lightly stir the rice. Sprinkle mixture of salt and black sesame seeds over the rice if you would like.
