Sweet Pumpkin Recipe

This pumpkin cake recipe uses Japanese pumpkin - kabocha.

Ingredients:

  • 1/4 medium kabocha
  • 2 tbsps sugar
  • 2 tbsp sugar
  • 1 tbsp milk
  • 1 egg
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon powder

Preparation:

Peel kabocha and cut it into small chunks. Heat kabocha in microwave until softened. Put kabocha pieces in a pan and mash them. Add sugar, butter, milk, vanilla essence, and cinnamon in the pan. Put the pan over low heat and mix all the ingredients well. Remove the pan from the heat and cool it down. Shape the dough into small and long ovals. Place the ovals on an oven pan. Bake them in 375F oven for 10 minutes.
