Grapefruit Jelly

It's a refershing dessert made with grapefruits.

Yield: makes four small cups

Ingredients:

  • 1 Tbsp gelatin powder, mixed with 4 Tbsp water
  • 2 grapefruits
  • 1 cup of water
  • 1 Tbsp honey
  • 2 Tbsp sugar

Preparation:

Peel grapefruits and cut them between the membranes, keeping the juice in a small bowl. Put the grapefruit flesh in another bowl. Put 1 cup of water in a sauce pan and heat to almost a boil. Stop the heat. Dissolve sugar and honey in the hot water. Add the gelatin mixture and stir well until dissolves. When the liquid is cooled off, add about 2 Tbsps of the grapefruit juice and stir well. Divide grapefruit flesh into serving cups. Pour the liquid over. Cool in the refrigerator until set.
