It's a sweet azuki bean soup with mochi rice cakes.

Ingredients:

  • 8 small blocks mochi rice cakes
  • 1 lb anko (sweet red bean paste)
  • 2 cups or more water

Preparation:

Put anko in a medium pan. Add water and simmer on medium heat. (Adjust the amount of water to desired sweetness.) Meanwhile, grill mochi in the toaster oven until softened. Place grilled mochi into individual soup cups. Pour hot soup over mochi.
*Makes 4 servings
