Egg and Enoki Stir-fry

Egg and Enoki Stir-fry

Enoki mushrooms are stir-fried with nira chives and eggs. It's a good dish to served with steamed rice.

Yield: 2 servings


  • 1 bunch nira chives, cut into 2 inch lengths
  • 1 enoki mushrooms, about 1/2 lb, trimmed and cut into 2 inch lengths
  • 2 eggs, beaten
  • 1 1/2 Tbsp miso
  • 1 Tbsp mirin
  • 1 Tbsp vegetable oil


  1. Mix miso and mirin in a small cup and set aside.
  2. Heat vegetable oil in a skillet on high heat.
  3. Stir-fry nira chives and enoki mushrooms until softened.
  4. Pour beaten eggs.
  5. When eggs begin to set, stir-fry them.
  6. Add miso seasoning and stir lightly.

I had seen enoki mushrooms in a chinese supermarket and when I first saw them, they didn't look very appetizing to me. However when I came across this recipe under the 'easy meals' section, I decided to go for it and try them out. I was very pleased with result, even though I made a mistake and used normal chives instead of garlic chives (nira). The stir fry still tasted really good, with a unique sweet taste :) I'm definetly making this again, it was easy to make and really tasty with rice!
