Mushrooms are mixed with daikonoroshi (grated daikon radishes). It's good to use your favorite mushrooms.
Yield: 2 servings
- 1/2 lb mushrooms, such as enoki and eringi, trimmed and cut or torn into small pieces
- 1 1/2 Tbsp sake
- 1 1/2 tsp soy sauce
- 1/2 tsp rice vinegar
- 1 Tbsp grated daikon, drained
Put mushrooms in a medium pan and pour sake. Put a lid over the pan and steam on high heat for a few minutes. Let it cool. Mix soy sauce and rice vinegar in a small cup and pour over the mushrooms. Add grated daikon and stir well. Serve into individual bowls.
