It's a simple pickle with cucumber which is called kyuri no wasabizuke. It's spicy, so adjust the flavor as you like.

Ingredients:

  • 4 - 5 Japanese cucumbers
  • 1 Tbsp wasabi powder
  • 4 Tbsp sugar
  • 1 Tbsp salt

Preparation:

Sprinkle some salt over cucumbers. Roll the cucumbers on a cutting board. Mix wasabi powder, sugar, and salt in a plastic bag. Put cucumbers in the plastic bag and shake the bag. Tie the plastic bag and leave it in the refrigerator overnight or 4 to 5 hours. Lightly wash the pickles and slice diagonally into 1/4 inch thick pieces.
