Nira-reba is stir-fried liver and nira (garlic chives). It's known as a dish to eat to get stamina.
Ingredients:
- 1/2 lb pork liver
- 2 bunch nira, cut into 2 inch lengths
- 2 Tbsp soy sauce
- 1 Tbsp grated ginger
- 1 Tbsp sake
- katakuriko/corn starch for coating
- vegetable oil for frying
- salt and pepper
Preparation:
Soak liver in cold water for about 30 minutes, changing the water for a couple times. Drain in a colander. Slice it into 1/4 inch thick small rectangular pieces and dry with papaer towels. Marinate liver pieces in the mixture of soy sauce, sake, and ginger for about 20 minutes.
Take out liver from the sauce and cover with katakuriko or corn starch. Reserve the sauce.
Heat some oil in a skillet and fry the liver pieces on medium heat until cooked through. Remove the liver from the skillet. Heat some vegetable oil in the skillet and saute nira on high heat until softened. Put fried liver back in the skillet and saute with nira.
Pour the reserved sauce over the ingredients and stir-fry quickly.
Adjust the flavor with salt and pepper.
