Ingredients:
- 1 lb pork tenderloin, cut into bite size pieces
- 1/4 lb boiled bamboo shoot
- 1 carrot, peeled and cut into bite size pieces
- 1/2 onion, cut into bite size pieces
- 4 small green bell pepper, cut into bite size pieces
- 4 shiitake mushrooms, stems removed and cut into bite size pieces
- 1 Tbsp soy sauce
- 2 Tbsps katakuriko potato starch (or corn starch)
- *Vegetable oil for frying
- For Sauce: 1 cup soup stock
- 3 Tbsps soy sauce
- 3 Tbsps rice vinegar
- 4 Tbsps sugar
- 1 Tbsp ketchup
- 3 Tbsps katakuriko potato starch (or corn starch)
Preparation:
Place pork in a bowl and pour 1 tbsp of soysauce and set aside. Boil carrot until soften and drain. Dust pork with starch. Heat oil in a wok to 350F and deep-fry pork until cooked. Mix soup stock, sugar, ketchup, soy sauce, and rice vinegar in a bowl and set aside. Heat some oil in a wok and stir-fry onion and green bell pepper on high heat until softened. Add carrot, bamboo shoot, and shiitake and stir-fry. Further, add pork in the wok. Pour mixed seasonings over ingredients and bring to a boil. Pour in the mixture of 3 Tbsp of water and starch and stir the sauce quickly. Stop the heat when it's thickened.*Makes 4 servings
