It's seasoned rice with matsutake mushrooms. Matsutake is a Japanese autumn delicacy.

Ingredients:

  • 2 1/4 cup Japanese rice
  • 2 1/2 cup dashi
  • 1/4 lb matsutake mushrooms, wiped and trimmed, shredded lengthwise
  • 1 aburaage (deep-fried tofu), blanched, cut into thin strips
  • 2 Tbsp sake
  • 2 Tbsp soy sauce

Preparation:

Put the rice in a bowl and wash it with cold water. Repeat washing until the water becomes clear. Drain the rice in a colander and set aside for 30 minutes. Put rice and dashi in a rice cooker. Add soy sauce and sake and stir the rice. Put matsutake and abura-age on top of rice. Start the rice cooker. When rice is cooked, let it steam for about 10 minutes before opening the lid.
