Cucumber and Crab Salad Recipe - Japanese Recipe

INGREDIENTS:

  • 2 small cucumber
  • 1/2 lb boiled crab meat
  • 3 tbsps vinegar
  • 1 1/2 tbsp sugar
  • 1 tsp soy sauce
  • 1 tbsp dashi soup
  • 1/2 tsp salt
  • 1 tsp fresh ginger juice

PREPARATION:

Cut cucumber into thin rounds. Put salt over cucumber slices and set aside for 30 minutes. Squeeze cucumber slices to remove the liquid. Mix vinegar, sugar, dashi soup, and soy sauce in a cup. Put crab meat and cucumber slices in a bowl and pour the dressing over and mix well. Pour ginger juice over the salad at last.
*Makes 4 servings
