Daikon Radish Salad

Daikon Radish Salad

It's a refreshing salad made with daikon radish.

Ingredients:

  • 3/4 lb daikon radish, peeled and sliced into thin strips
  • 1/4 lb hydrated wakame seaweed, cut into 1 1/2 inch length
  • 1 small cucumber, sliced into thin strips
  • for dressing:
  • 4 Tbso rice vinegar
  • 2 Tbsp soy sauce
  • 2 Tbsp vegetable oil
  • 2 tsp sugar

Preparation:

Soak daikon strips in cold water for about 10 minutes and drain in a colander. Mix together daikon strips, cucumber strips, and wakame seaweed in a large bowl. Serve the salad in a large salad bowl or individual salad bowls. Mix all the ingredients for dressing in a small bowl. Pour over the salad.
