Daikon is a large while radish. It's common to eat raw daikon in Japan like grated daikon (daikon oroshi). Onion flavored salad dressing goes with this salad.

Ingredients:

  • 3/4 lb daikon radish, peeled and sliced into thin strips
  • 1/4 lb dehydrated wakame seaweed, cut into 1 1/2 inch length
  • 1 small cucumber, sliced into thin strips
  • *Japanese-style salad dressing

Preparation:

Soak daikon strips in cold water for about 10 minutes and drain in a colander. Mix together daikon strips, cucumber strips, and wakame seaweed in a large bowl and chilled in the refrigerator. Serve the salad in a large salad bowl or individual salad bowls. Pour Japanese-style onion flavored salad dressing before eating.
