It's a simple kabocha salad with garlic flavored dressing.

Japanese Recipes

Ingredients:

  • 1 lb. kabocha, sliced into 1/3 inch thick crescent pieces
  • 1/2 onion, thinly sliced
  • 1 tsp grated garlic
  • 2 Tbsps vinegar
  • 4 Tbsps vegetable oil
  • *salt and pepper to season

Preparation:

Soak thinly sliced onion in water for 10 minutes or more. Meanwhile, boil kabocha in a large pot until softened. Drain kabocha and sprinkle some salt over them and cool. Mix vinegar, vegetable oil, and garlic in a bowl to make dressing. Drain onion slices and squeeze them to remove excess water. Put kabocha and onion in a bowl and pour the dressing. Adjust the flavor with salt and pepper.
*Makes 4 servings
