This sour sauce is called kimizu. Kimi means egg yolks, and zu means vinegar. This sauce can be served with boiled shrimp, vegetables, chicken, and more.

Ingredients:

  • 2 pasteurized egg yolks
  • 2 Tbsp rice vinegar
  • 2 Tbsp sugar
  • 3 Tbsp dashi soup

Preparation:

Put all ingredients in a bowl. Mix well. Place the bowl over hot water and heat the sauce, stirring constantly until thickened. Cool the sauce.

*Makes 2-4 servings.
