- 2 cups kombu and katsuobushi dashi
- 1/3 cup soy sauce
- 1/3 cup mirin

I lived in Japan for years and frequented many soba restaurants. This recipe for the basic soba tsuyu is authentic. Variants use other fish flakes and flavorings, but this is the base and quite tasty. Make sure you use konbu in your dashi.
