INGREDIENTS:

  • 3 1/3 cups dashi soup stock
  • 1/2 tsp salt
  • 1 tbsp soy sauce
  • 2 eggs
  • 12 - 16 boiled string beans
  • 2 shiitake mushrooms

PREPARATION:

Thinly slice shiitake mushrooms. Heat dashi soup stock in a pan. Add shiitake slices, soy sauce and salt in the soup and bring to a boil. Lightly beat eggs in a bowl. Pour the eggs into the soup slowly. Stop the heat and add boiled string beans in the soup.

*Makes 4 servings
