Ingredients:
- 3 1/3 cup dashi soup stock
- 1/2 Tbsp sake rice wine
- 1 tsp soy sauce
- 1 tsp salt
- 2 tsp katakuriko (potato starch), mixed with 1 Tbsp of water
- 2 eggs, beaten
- 4-6 mitsuba (Japanese wild parsley)
Preparation:
Heat dashi soup stock in a deep pot. Add sake, soy sauce and salt in the soup and bring to a boil. Add the katakuriko mixture in the soup and stir well. Pour eggs into the soup gradually. Stop the heat and put mitsuba in the soup.*Makes 4 servings
