Kakitamajiru - Japanese Egg Drop Soup

Japanese egg drop soup is called kakitama-jiru. It's a plain clear soup often served in a Japanese-style meal.

Ingredients:

  • 3 1/3 cup dashi soup stock
  • 1/2 Tbsp sake rice wine
  • 1 tsp soy sauce
  • 1 tsp salt
  • 2 tsp katakuriko (potato starch), mixed with 1 Tbsp of water
  • 2 eggs, beaten
  • 4-6 mitsuba (Japanese wild parsley)

Preparation:

Heat dashi soup stock in a deep pot. Add sake, soy sauce and salt in the soup and bring to a boil. Add the katakuriko mixture in the soup and stir well. Pour eggs into the soup gradually. Stop the heat and put mitsuba in the soup.
*Makes 4 servings
