It's a clear soup with egg which is often served in a Japanese-style meal.

Ingredients:

  • 3 1/3 cup dashi
  • 1/2 Tbsp sake rice wine
  • 1 tsp soy sauce
  • 1 tsp salt
  • 2 tsp katakuriko (potato starch), mixed with 1 Tbsp of water
  • 2 eggs, beaten
  • 4-6 mitsuba (Japanese wild parsley) *optional

Preparation:

Heat dashi in a deep pot. Add sake, soy sauce and salt in the soup and bring to a boil on medium heat. Add the katakuriko mixture in the soup and stir well. Pour eggs into the boiling soup gradually. Stop the heat and put mitsuba in the soup if available.
