Soy milk can be a good substitute for cow milk. This creamy soy milk soup contains lots of vegetables and can be a quick meal itself.
Soy Milk

Ingredients:

  • 1 potato, peeled and cubed
  • 1/2 onion, cubed
  • 2 oz carrot, cubed
  • 2 slices bacon, cut into small pieces
  • 1 Tbsp butter
  • 2 1/2 soy milk
  • 1 cube chicken bouillon

Preparation:

Put butter in a medium pot, and saute onion, potato, carrot, and bacon over medium heat. Add soy milk and bring to a boil. Be careful not to overflow. Turn down the heat to low and dissolve chicken bouillon in the soup. Stir the soup. Simmer for about 15 minutes, or until vegetables are softened. Stop the heat. Season with some salt and pepper as you like.
