Japanese Clear Soup with Chicken and Green Beans

Traditional Japanese clear soup is called sumashijiru or suimono. It's usually lightly seasoned to emphasize the flavor of dashi. Various vegetables, meat, seafood, or mushrooms can be used in suimono.

Ingredients:

  • 1/4 lb boneless, skinless chicken breast
  • 8-12 snow peas
  • 3 1/3 cups bonito dashi soup stock
  • 1 tsp salt
  • 1 tsp soy sauce
  • 1 Tbsp sake

Preparation:

Trim the ends of snow peas. Boil snow peas for a minute and soak them in water to cool. Slice snow peas into thin strips. Cut chicken breast into bite-size pieces. Heat bonito dashi soup stock in a pan. Add chicken and simmer until cooked. Season with salt, sake, and soy sauce. Add snow peas and cook for a minute.
