By Setsuko Yoshizuka, About.com

To prepare sushi rice, it's best to use a wooden flat bottomed bowl called sushi-oke. The wood absorbs excess moisture from hot steamed rice and is effective in cooling rice quickly. To keep a wooden sushi bowl in good condition for a long time, please remember a few tips. Also, follow the care instructions come with your sushi-oke.

Tip 1:
Before using a newly bought sushi-oke, fill your kitchen sink or a large bowl with warm water and mix 3 tbsp of vinegar. Soak the sushi-oke in the water for about two hours. Lightly rinse it and dry in a dark, cool, airy place.

Tip 2:
Whenever you use a sushi-oke, wipe it gently with a damp cloth before using.

Tip 3:
After using a sushi-oke, quickly wash it with water. Please don't soak it in water for a long time. Wipe dry with a clean, dry cloth. Dry in a dary, cool, airy place. *It's important to avoid direct sunlight.
