Ingredients:
- 2 small satsuma-imo (sweet potato/yam)
- 1 egg yolk
- 2 tbsp butter
- 1 tbsp milk
- 2 1/2 tbsps sugar
Preparation:
Steam satsuma-imo until soften. Peel satsuma-imo skin and mash the satsuma-imo in a bowl. Add butter, egg yolk (leave some for glazing), sugar, and milk in the bowl. Stir the ingredients well. Make small oval-shaped sweet potato cakes and put each cake on an aluminium cup. Mix some water and left-over egg yolk in a small cup. Glaze cakes with the egg mixture. Place cakes on a tray and bake in 375 F oven for 10-15 min.*Makes 4 servings
