Fried chicken pieces are seasoned with spicy and sour sauce which adds a refreshing flavor.
Ingredients:
- 1 lb boneless chicken thigh, cut into bite-size pieces
- 1 onion, thinly sliced
- 1/2 cup rice vinegar
- 4 Tbsp sugar
- 4 Tbsp soy sauce
- 1 tsp chopped dried aka-togarashi (red chili pepper) *adjust the amount to your preference
- vegetable oil for frying
- katakuriko starch or corn starch for coating
Preparation:
Soak onion slices in cold water for about 30 minutes and drain well. Set aside.
Mix soy sauce, sugar, vinegar, and chopped aka-togarashi in a sauce pan and put on low heat. When the sugar dissolves in, stop the heat. Set aside.
Dust chicken with katakuriko starch or corn starch. Heat some vegetable oil in a skillet and fry chicken on medium heat until cooked through and brown. Stop the heat. Carefully wipe excess oil in the skillet with paper towels. Pour sour sauce over the chicken. Slightly shake the skillet to coat the chicken with the sauce. Serve onion slices on plates. Place chicken pieces on top of the onion. Pour some sauce left in the skillet over the onion and chicken.
