Hiyashi chuka is made with chukamen (raw ramen noodles) and is served with lots of toppings. Instant ramen noodles aren't suitable for this dish. For toppings, choose different colored ingredients and arrange them colorfully on top of noodles.
Packages of hiyashi chuka noodles can be found at Asian grocery stores, and they come with dressings (tare). Nowadays, many types of hiyashi chuka noodles and dressings are available. There are mainly two types of tare dressings for hiyashi chuka: soy sauce flavor and sesame flavor.
Hiyashi Chuka Dressing Recipes:
- Soy sauce flavor dressing (4 servings):
1/3 cup water / 3 Tbsp rice vinegar / 2 Tbsp soy sauce / 3 Tbsp sugar / 1 tsp sesame oil - Sesame flavor dressing (4 servings):
1/3 cup water / 2 Tbsp sugar / 4 Tbsp soy sauce / 2 Tbsp rice vinegar / 3 Tbsp grated white sesame seeds / 1/2 tsp sesame oil

- Thin omelette strips
- Ham
- Boiled chicken breasts
- Cucumber
- Boiled bean sprouts
- Tomatoes
- Beni shoga (pickled red ginger)
- Karashi mustard
