Simmered Daikon Ankake

Simmered Daikon Ankake

Bite-size pieces of daikon radishes are simply simmered in dashi soup. The soup is thickened with katakuriko.

Yield: 4 servings

Ingredients:

  • 2 lb daikon radish, peeled and cut into bite-size pieces
  • 3 oz. imitation crab, shredded
  • 1 cup dashi
  • 2 Tbsp sake
  • 1 Tbsp mirin
  • 1/2 salt
  • 1 Tbsp katakuriko (potato starch) or corn starch, mixed with 1 Tbsp water

Preparation:

Put dashi, sake, and daikon in a medium pan. Bring to a boil on high heat and turn down the heat to medium. Simmer daikon until softened. Season with mirin and salt and add imitation crab. Bring to a boil. Add katakuriko starch mixture and stir well. When the soup thickens, stop the heat.
