Goma-ae are simple Japanese side dishes seasoned with sesame sauce. A variety of vegetables can be used to make gomaae dishes.
Yield: 2 servings
Ingredients:
- 6 oz. green beans, trimmed
- 5 Tbsp roasted sesame seeds
- 1 Tbsp sugar
- 1 1/2 tsp soy sauce
- 1 Tbsp dashi soup stock
- *salt
Preparation:
Boil green beans in lightly salted water for a few minute, or until desired softness is reached. Drain and soak green beans in ice water until cool. Drain
well. Cut into about 2-inch lengths and set aside. Put sesame seeds in a suribachi (Japanese mortar) and grind them with a surikogi pestle. Or, place
sesame seeds in a blender or food processor and grind until almost smooth. Add sugar and mix well. Further, add soy sauce and dashi and mix until
combined. Mix boiled green beans and the sesame sauce.
