Horensou no Ohitashi

It's a common spinach dish cooked in Japan. Ohitashi is a traditional side dish, and various leaf vegetables are prepared in this way. It's a simple recipe which is good to remember.

Ingredients:

  • 1 lb fresh spinach, washed
  • 2 Tbsp soy sauce
  • 4 Tbsp dashi soup stock
  • 4 Tbsp katsuobushi (dried bonito flakes)

Preparation:

Boil lots of water in a large pot. Add a pinch of salt in the water. Put spinach in the boiling water from the stem side. Boil spinach for about one minute. Drain and soak the spinach in water to cool. Drain and squeeze the spinach to remove the excess liquid. Cut spinach into 1 1/2 inch lenghs. Serve spinach in a bowl and pour mixture of soy sauce and dashi. Sprinkle katsuobushi on top.
