Horensou no Ohitashi

It's a simple spinach dish called horensou-no-ohitashi. Ohitashi is a traditional side dish, and various leaf vegetables are prepared in this way in Japan.

Ingredients:

  • 1 lb fresh spinach, washed
  • 2 Tbsp soy sauce
  • 1/4 cup dashi soup stock
  • 1/2 cup katsuobushi (dried bonito flakes)

Preparation:

Boil lots of water in a large pot. Add a pinch of salt in the water. Put spinach in the boiling water from the stem side. Boil spinach for about one minute. Drain and soak the spinach in water to cool. Drain and squeeze the spinach to remove the excess liquid. Cut spinach into about 1 inch lengths. Serve spinach in a large bowl or into individual small bowls. Pour mixture of soy sauce and dashi. Sprinkle katsuobushi on top.
