- The stock my mother used for miso soup used pork bones, and she called it butajiru. I wonder if it is a regional term; she was from Fukuoka.

Some of My Favourite Miso Soups!
- I love miso soup almost any way, but for breakfast, I like it with grated ginger and a thin slice of lemon! I also like it poured over toasted sesame mochi or with udon noodles, both topped with chopped scallion. Forget chicken soup when you have a cold - have some miso soup with a bit of garlic, ginger, and shiitake and/or maitake mushrooms, fresh or dried, topped with scallions, of course. That will cure what ails you!

Misomisomiso
- I like Hokkaido style, with onions and potatoes. And ton-jiru, if that counts. But, of course, negi and tofu is best.

My favourite miso soup
- I actually have three fav miso soups. One is with awase miso and potato and onion. The other one is also made with awase miso, called misosoup with pork (Tonjiru) it's made with pork marianted in sake and soysauce, then you add potatoes, silken tofu and spring onions. The last favourite is carrot and miso soup. MAde with carrots, cellery and pork and again awase miso. :)
